Macaroni and Cheese – Baked

Ingredients

  • 8 oz pkg macaroni
  • 3 tbsp butter (or margarine)
  • 2 tbsp flour
  • 3 cups milk
  • 2 egg yolks
  • 2 cups grated cheddar
  • 1/2 tsp salt
  • few dashes pepper
  • 2 tsp parsley
  • 2 tsp chopped pimento
  • 1/4 cup fine dry bread crumbs

Instructions

Boil - prepare macaroni. Drain and let cool.
Melt butter, blend in flour - add milk gradually - stirring constantly and boil gently until smooth and thick. Remove from heat. Beat yolks, and add just a LITTLE sauce - stir well and then add to sauce in pan - add a little hot sauce, then 1 1/2 cups cheese - just until melted - add seasonings. Fold in macaroni - turn into buttered baking dish. Toss cheese with crumbs top the macaroni - 450deg - 10 to 12 minutes. Brown and bubbly
