Low-Fat Orange-Ginger Creamsicles

Yield: About 3-1/2 cups mix, enough for 10 2-1/2-ounce pops


  • 1 4-inch piece ginger, peeled, cut into large chunks
  • 2/3 cup honey
  • 1/4 cup plus 2-1/4 cups orange juice
  • 3/4 cup low-fat plain yogurt


Combine ginger, honey, and 1/4 cup orange juice in a blender. Blend together until ginger is pureed. Pour mixture through a fine-mesh strainer, pressing with a spatula to remove ginger fibers. Rinse blender, then pour strained liquid back into blender with remaining orange juice and yogurt. Blend 20 seconds. Pour into molds; freeze 4 hours or overnight.
