LIGHT Eggnog Cookies

This is a holiday recipe that we (even my young children, who do not like eggnog) love to enjoy as a treat. The adults like to have the cookies with coffee or eggnog and the children with a big glass of cold milk.

Yield: About 45 cookies

  • 2/3 c. butter
  • 1 c. sugar
  • 1/2 tsp. nutmeg
  • 3/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg
  • 1/2 c. Hood Light Eggnog
  • 2 1/2 c. flour
  • Eggnog frosting (simply Hood Light Eggnog and enough Confectionery Sugar to make a frosting consistency).

Beat butter for about one minute. Add sugar, nutmeg, baking powder and salt; beat until well combined.

Add egg and eggnog; beat until well combined.

Beat in the flour until just combined.

Chill dough until easy to handle (about 2 - 3 hours).

Preheat oven to 350 degrees.

Roll out dough in flour, sugar and nutmeg. Cut out cookies.

Bake for about 8 minutes or until edges are browned.
