John Fleer’s Sweet Tea brined Fried Chicken
- 8 chicken quarters
- 1 qt brewed tea-double strength
- 1 lemon - zested quartered
- 1 cup sugar
- 1/2 cup kosher salt
- 2 cups all purp flour
- 2 cups masa harina
- 2 tbsp old bay seasoning
- 1 tbsp chili powder
- salt and peper to taste
- 2 cups buttermilk
- 1 qt veg oil
InstructionsMix brine - simmer 5 minutes until sygar and salt dissolve
Add 1 quart ice water - submerge chicken for 48 hours - refrigerate
Mix flour, harina, old bay and seasonings in large bowl.
Soak chicken in buttermilk - half hour -drain
coat chicken in flour mixture.
let rest 30 minutes
heat oil to 325deg. - fry - 15 minutes
cool - can be refrigerated overnight...
