John Fleer's Sweet Tea brined Fried Chicken

Ingredients

  • 8 chicken quarters
  • BRINE:
  • 1 qt brewed tea-double strength
  • 1 lemon - zested quartered
  • 1 cup sugar
  • 1/2 cup kosher salt
  • Crust:
  • 2 cups all purp flour
  • 2 cups masa harina
  • 2 tbsp old bay seasoning
  • 1 tbsp chili powder
  • salt and peper to taste
  • 2 cups buttermilk
  • 1 qt veg oil

Instructions

Mix brine - simmer 5 minutes until sygar and salt dissolve
Add 1 quart ice water - submerge chicken for 48 hours - refrigerate
Drain

Mix flour, harina, old bay and seasonings in large bowl.

Soak chicken in buttermilk - half hour -drain
coat chicken in flour mixture.
let rest 30 minutes
heat oil to 325deg. - fry - 15 minutes
cool - can be refrigerated overnight...
