Goat Cheese and Greens

Yield: Makes 6 to 8 servings.


  • 4 cups mixed salad greens
  • 1 medium red onion, peeled and sliced
  • 4 ounces fresh goat cheese,crumbled
  • 2 tomatoes, cored and cut into wedges
  • salt and freshly ground pepper, to taste
  • croutons
  • balsamic vinaigrette


Rinse salad greens, pat dry, and place into a large salad bowl. Add the red onion, goat cheese, and tomatoes, and season with salt and pepper. When ready to serve, add the croutons and vinaigrette, and toss well.
