Fried Barley

When you can’t get wild rice — or don’t want to pay the price — this is a very acceptable substitute.

Yield: Serves 6.

Ingredients

  • 1/3 cup butter or margarine
  • 1/4 cup chopped onion
  • 3-1/2 cups cooked quick barley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
