Ingredients

  • 4 slices bacon, cut into small pieces
  • 3 small jars Armour dried beef, chopped
  • 1 can sliced mushrooms
  • 1/4 c. butter
  • 1/2 c. flour
  • 4 c. milk
  • 1 tsp. pepper
  • 16 eggs
  • 1 c. evaporated milk
  • 1/4 tsp. salt
  • 1/4 c. butter

Instructions

Saute bacon until crisp; add dried beef, mushrooms, and butter. Stir until butter is melted. While hot, add flour and cook one minute. Stir in milk and pepper; cook until thick and smooth. In mixing bowl, mix eggs, evaporated milk, and salt. In large skillet, scramble eggs in 1/4 cup butter. In 1 large or 2 small baking dishes, layer eggs and sauce; repeat layers. Bake 1 hour at 275 degrees.
