Chocolate Caramel Sauce


  • 2 tbsp sugar
  • 3 tbsp heavy cream
  • 1 oz fine quality bittersweet coarsely chopped chocolate
  • 1/8 tsp vanilla


cook sugar in a heavy saucepan over moderately high heat until sugar begins to melt - 2 mins.
Stir occasionally with a fork until sugar is melted into a deep golden caramel - 2 to 3 mins

Once bubbles begin to subside - add chocolate and stir until smooth.
Stir in vanilla - store or use atop ice cream right away...
