Chicken Doble

Here’s a simple dish that couldn’t be tastier. Try red wine vinegar in place of the cider vinegar for a change of pace, and serve with rice.

Yield: 6 servings

Ingredients

  • 2 pounds chicken thighs, skinned
  • 2 garlic cloves, chopped
  • 1/4 cup soy sauce
  • 1/4 cup cider vinegar
  • 1/2 cup water

Instructions

Combine all the ingredients in a heavy 2-quart saucepan or Dutch oven. Bring to a boil and boil for 30 minutes. Reduce the heat and simmer for 15 minutes. Serve hot.
