Ingredients

  • gramn cracker pie crust, 9-inch
  • 1/3 cup lemon concentrate
  • 2 1/4 cups finely chopped carrots
  • 1/4 sugar
  • 1 quart vanilla ice cream, softened

Instructions

Combine lemon, carrots & sugar in a blender

& process until smooth.

Transfer to a bowl & fold in the ice cream, mixing well.

Pour into the pie crust, cover & freeze 8 hours.

Thaw slightly to cut & serve. SERVINGS: 8
