Carrot Cake

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 teaspoons soda
  • 1-1/2 cups oil
  • 4 eggs
  • 1/2 cup chopped nuts (optional)
  • 3 cups grated carrot

Instructions

In a large bowl, mix together first five ingredients. In a separate bowl mix oil, eggs, nuts, and carrot. Add wet mixture to dry mixture and stir until moistened.

Frosting

Ingredients

  • 8-ounce package cream cheese
  • 1/4 cup butter
  • 2 teaspoons vanilla
  • 3/4 cup powdered sugar

Instructions

Combine ingredients in a bowl and mix well.

Bake cake at 350 degrees for 45 minutes. Let cool, then frost.

  • I have made this carrot cake many times and each time I get rave reviews. They all love it!! They can’t wait for fall when I start baking carrot cakes to give away.
