Brownie Cupcakes


  • 4 squares unsweetened chocolate
  • 2 sticks (1 cup) margarine or butter
  • 1 1/4 cups sugar
  • 1 cup flour
  • 4 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon butter flavoring
  • 1 cup chopped pecans


Preheat oven to 325 degrees. Place muffin papers in the cups of a dozen muffin cups. Place the chocolate and butter in a glass bowl. Microwave it until it melts. Start with 1 minute, stir and add 20 seconds and stir. Continue with this until melted and combined. Add the sugar, flour, eggs (one at a time, beating well after each addition), vanilla and butter flavoring. Beat together well. Add pecans and mix well. Bake 20 minutes if using regular muffin tins or 10 minutes if using mini muffin tin. Do not over bake. Makes 12 regular muffins or two dozen mini cupcakes.
