brown sugar – cornmeal muffins
- 1/2 cup plus 1 tbsp firmly packed brown sugar
- 1/4 cup plus 2 tsp white cornmeal - divided
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup vanilla yogurt
- 3 tbsp skim milk
- 1 tbsp melted margarine
- 1 tsp van ext.
- 1 egg
InstructionsCombine 1 tbsp sugar and 2 tsp cornmeal in a bowl - stir well and set aside.
Combine remaining 1/2 cup sugar, 1/4 cup cornmeal, flour and next three ingredients in a bowl - make well in center.
Combine yogurt and next 4 ingredients - stir well. Add to dry - stir until just moistened
Divide between 12 sprayed muffin cups - sprinkle atop with sugar/meal mixture
400 deg - 17 minutes
Remove from pans immediately
