A rich and easy shortbread from Holland.

Yield: 12 to 16

  • 1 cup (2 sticks) butter
  • 1 cup white sugar
  • 1 egg
  • 2 teaspoons almond extract
  • 2 teaspoons baking powder
  • 2 cups all-purpose white flour

Preheat the oven to 350 degrees F. Melt the butter. Stir in the sugar, egg, and almond extract. Sift together the baking powder and flour and stir into the mixture. Spread into an ungreased 9-inch pie plate and bake for 25 minutes. Cut into wedges while warm.

  • My husband is Dutch and just LOVED this recipe. Very rich, very easy! Up in Canada most Dutch stores sell these for up to $7.00 each. This is a VERY good alternative and easy on the budget also.

It is very rich and a little too sweet but I would make it again. Maybe a little less sugar. I would like to try half vanilla and half almond.
