These vegetarian bean burgers are tasty and fast. For best results, pan-fry as directed rather than grill.
- 2 tbsp olive oil
- 1 medium onion - finely chopped
- 2 garlic cloves
- 1 teaspoon cumin seeds
- 2 tablespoons chopped parsley
- 1 15 oz. can black eyed peas (or cannellini beans)
- 1 1/3 cup fresh bread crumbs
- 1 large egg
- 1/4 tsp chili powder
- salt and pepper
InstructionsSoften onion and garlic in oil. Add cumin - cook 3 minutes.
Off heat stir in parsley and beans. Mash or puree in a food processor. Stir in crumbs - then egg. Mix well and season
Shape into burgers and fry in hot oil
