Bean Burgers

These vegetarian bean burgers are tasty and fast. For best results, pan-fry as directed rather than grill.

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion - finely chopped
  • 2 garlic cloves
  • 1 teaspoon cumin seeds
  • 2 tablespoons chopped parsley
  • 1 15 oz. can black eyed peas (or cannellini beans)
  • 1 1/3 cup fresh bread crumbs
  • 1 large egg
  • 1/4 tsp chili powder
  • salt and pepper

Instructions

Soften onion and garlic in oil. Add cumin - cook 3 minutes.

Off heat stir in parsley and beans. Mash or puree in a food processor. Stir in crumbs - then egg. Mix well and season

Shape into burgers and fry in hot oil
