Banana Chocolate Chip Nut Bread

Yield: 1 loaf

Ingredients

  • 1-1/2 cups sugar
  • 1/2 cup butter
  • 2 large eggs, lightly beaten
  • 2-1/4 cups flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/4 cups mashed banana
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk
  • 1 cup chopped walnuts
  • 1 cup semisweet chocolate chips

Instructions

Preheat oven to 350 degrees F. Spray a large loaf pan with nonstick cooking spray. Beat sugar and butter at medium speed with an electric mixer until well blended. Add eggs one at a time, beating well. Combine flour and next three ingredients in a separate bowl. Add to butter mixture, beating well. Combine banana and next four ingredients. Add to flour mixture, beating well. Pour batter into loaf pan and smooth out top.

Bake 1 hour and 15 minutes or until tester comes out clean.

Additional Notes:

In order for the middle of the loaf to be fully baked, the corners of the loaf will appear overdone. Just cut off and discard the end slices.
