Apple Onion Jack Soup

They thought this was the best onion soup they ever had!


  • 3 lg. onions sliced (I used Vidalia)
  • 3 to 4 Teaspoons butter
  • 3 cans beef broth
  • 1/2 tsp white pepper
  • 1 cup apple cider (unfiltered if available)
  • 1/3 cup apple jack brandy (I used regular)
  • French Bread
  • Provolone cheese
  • Mozzarella cheese


3 large onions
3-4 tsp butter
Sautee till soft
3 cans beef broth
1/2 tsp white pepper
Add and heat slightly
1 cup apple cider
Bring to boil
Remove from heat
1/3 Cup apple jack brandy (or regular brandy)

Laddle into crocks
Top with french bread (I chunk mine and toast)
Top with Provolone and Mozzarella cheese
Brown under broiler and enjoy.
