Yield: Makes 1-1/2 dozen.
- 1 cup old-fashioned rolled oats
- 1 stick (1/2 cup) unsalted butter
- 1 cup whole-wheat flour
- 1 teaspoon baking powder
- 1 tablespoon light brown sugar
- 1/2 teaspoon salt
- 1/4 cup milk
Preheat oven to 350 degrees F. Mix oats with butter in electric mixer or food processor, then add remaining ingredients and mix until it forms a dough. On a lightly floured surface, roll dough fairly thin and cut into 3-inch rounds. Arrange on greased baking sheet, slightly apart, and bake for 15 minutes, until golden.
