Ada’s Carrot Casserole

A fine dish for Saturday lunch or Sunday supper, served with a Waldorf salad.

Yield: Serves 6.


  • 2 tablespoons butter, cut in small pieces
  • 2 cups mashed carrots
  • 3 eggs, beaten
  • 2 cups grated cheese
  • 1 small onion, grated
  • Salt and pepper
  • Paprika


Combine all ingredients, mixing well to blend. Turn into greased 1-1/2-quart casserole dish and bake at 325 degrees F for 40 minutes.
